Trying to empty out the freezer to fill it with a pig.
I forget how much I love to can from year to year.
I also forget how much work it is.
Ready to process.
Two double canners.
Getting ready to go in a jar.
I ended up with 65 pints of chicken.
I love having this stuff on the shelf.
Now I go to work for the next 4 days.
The ER may be more restful.
We have had some worrisome patients.
I know one + Covid patient and another few that I am convinced and waiting for results.
I have mixed feelings on all of this.
My bigger concern is the economy.
Not sure Idaho should be shut down like New York.

It certainly is a lot of work to do canning, but worth it!
It will be nice to have those cans of chicken on hand for a quick dinner prep :)
I'm going to do a lot of canning this year as well, though not the 500 plus cans that I did one fall, when all the kids were home.

I've never canned chicken. WOW! I'm impressed with the amount of canned chicken that you processed. Maybe I should try it sometime although I gave my big pressure cooker to my brother because I was scared of using it. Chicken is so expensive in our area.

I love your canning and preparedness! It is always so reassuring to have some food storage. It is good you are canning chicken, since now it seems there may be shortages of mean due to this pandemic. Utah is starting to open back up today. We are being told to wear masks everywhere. I hope it isn't too soon, but we do need to get the economy back on track. Our son, a college student, was working 4 days a week, and his hours were cut due to Coronavirus and he is down to working just one day a week. Not enough to pay tuition. Frustrating times. Hope you and your family stay well. Thanks for your service in the E.R..

You are so smart to be canning chicken, the price of meat is skyrocketing! My freezer is full so hopefully the power doesn't go out! I agree, I think we need to start opening up, but slowly. I know so many people who are not taking this virus seriously. But, I am afraid that our economy won't recover if we don't get back to work. Stay well, I know working in healthcare is such a risky job - You are all heroes!!
